You’d Better be Ready to Dance the Jig!

Last night, Josh and I went to Dane Cook with our two of our friends. We were not insane Dane Cook fans before, which is why I was totally surprised at the fact that GM Place was packed with people- screaming, cheering, taking pictures throughout the show… he really has some dedicated fans!

“You’d better be ready to dance the jig” was a quote from Dane when he was telling a story about how girlfriends/women often purposely ask guys questions that there are no right answers to! And he was saying that guys had better be ready with an answer to their girlfriend’s question, and ready to “play the game” Haha, I don’t know if women really do this… I don’t think we’re capable of being so devious! What do you think?

We actually agreed that Dane’s two warm-up acts may have been funnier, so that’s saying a lot for them, because we laughed the whole way through Dane’s show too, and it was definitely a fun time! There’s nothing like laughing until your abs hurt, your cheekbones hurt, and your throat is dry and raw

While I ate breakfast this morning I delved in Wayne Dyer’s “Excuses Begone!” and can’t wait to keep reading after I get this paper out of the way!
Breakfast was one of my muffins, some cantaloupe slices, and a smoothie a la Magic Bullet.

Must. Stop. Procrastinating. I’m off to finish this paper! Enjoy the day…

We woke up to sun again this morning and I am so thankful we have a fan now! The apartment is boiling. After a yummy breakfast of one of my bran&spelt/banana/blueberry/strawberry muffins (must think of a better name for them!) and some fruit with yogurt, I sat down with my computer to work on my essay… And ended up posting instead!

A few days ago, I caught a Wayne Dyer PBS special on tv, centered around his new book “Excuses Begone!”… The tv program was really good; I always love hearing what he has to say, and I definitely need reminders about implementing tools and techniques into my life, so yesterday, I bought the book.

I’m really looking forward to reading it… I mean, who doesn’t want to “change lifelong, self-defeating thinking habits”?!

I have an essay to finish for tomorrow, and tonight we’re going to Dane Cook, who’s in town on his comedy tour, so have to get moving!

Fans, Tans… and a Magic Bullet!

As I mentioned earlier, the sun was shining again today, and it was HOT! I love the heat though, so after the gym, I decided to lay outside in the sun and do my readings for school. I only lasted about 30 minutes until I had to go inside to start dinner, but it felt so good to get some vitamin D!

I began by marinating two big chicken breasts in soy sauce, worcestershire, dijon mustard, olive oil, and salt and pepper.

By this time, Josh had arrived home and we both agreed that our apartment was WAY too hot, and because we have no air conditioning (who needs it in Vancouver?!), we decided it was time for a big stand-up fan. Thus, a trip to Canadian Tire. Fan? Check. And then we spotted the Magic Bullet display… Our cuisinart broke a few months ago, and I really don’t know how I’ve survived without one for so long. Not being able to make hummus breaks my heart.
So we decided that the Magic Bullet was a must-purchase, and headed home to eat dinner.

We made a delicious salad with Romaine lettuce, cuke, tomato, avocado, sunflower seeds, goat’s cheese, and chicken.

While the chicken cooked on the BBQ, we put a can of garbanzo beans, 2 cloves of garlic, tahini, parsley, lemon juice, and S&P into the Bullet, and came out with a wonderful hummus. Slathered on Terra Multigrain bread, it was fantastic.

Josh figured out the absolute perfect way to cook the chicken. Breasts are often hard to get right on the grill because they’re so lean, but he put the two breasts over indirect heat for 6 minutes on each side, with a tinfoil ‘lid’ over top, and then grilled them for 2 minutes on direct heat to finish them off. The chicken was a-mazing! So so good.

After making hummus and salad dressing with the Magic Bullet, we were really on a roll, so for dessert, we decided to make a smoothie. We combined strawberries, half a banana, ice, and almond milk. Josh didn’t like the almond milk addition, but I thought it was great. I think we’re definitely going to be using this machine a lot!

I’m craving a cup of peppermint tea, but it’s still too hot, so I’m off to go sit in front of the fan for a bit before bed

Sunshine My Only Sunshine

Vancouver has been graced with the presence of the SUN for about 6 days now, and needless to say, I’m loving it! This is one of the most beautiful cities in the World, and I’m all about it when it’s sunny out.

Last night, Josh brought home some amazing groceries to create a very yummy dinner:
fresh, wild salmon (with a mustard/dill sauce, bbq’d)asparagus (with olive oil, salt, and pepper)
6 prawns (covered with olive oil, garlic, s&p, bbq’d)
quinoa, goat’s feta, tomatoes, parsley, lemon, avocado (to make a delicious salad)
strawberries and fro yo (for dessert)
YUM. We were both in food heaven. Josh cooked the salmon on cedar planks on the BBQ and it was so good!

I have school work to do, so had better get to it! Enjoy the sun today!

New Beginnings

Eating and reading have pretty much always been my favorite two things in the World.  

From engrossing novels to trashy paperbacks, to art history books, self-help volumes, autobiographies, cookbooks, and poetry, I’ve never had a problem getting lost in a book.

Good food is also one of my great loves.  As they say, some people eat to live, and some live to eat.  I still haven’t decided whether it’s a good or a bad thing, but I’m definitely in the latter category.  Last year, I completed a diploma in Holistic Nutrition, and that fueled my appetite for food even further, and opened up a whole new world of culinary possibilities!
